I love Fridays.
Maybe too much.
I've been in the habit of celebrating Friday and the rest of the weekend by allowing for indulgences in the food department for the past 20 or so months since E joined our clan.
Lately, I've been making homemade pizza for dinner Friday nights.
It's a huge hit, and it's something all the boys in my house {even the hubby} look forward to chowing on.
Being on on Phase One of the Curves Weight Management Program for our 90-Day Challenge isn't putting a damper on the pizza plans either!
I just had to get creative, that's all.
So here's to healthy pizza for Phase One*:
Half a zucchini.
Boil the zucchini until they are cooked.
Preheat the oven to 325 degrees.
Scoop out the inside, leaving only the outside.
{split the following amounts between zucchini halves.}
Add pizza sauce {we like Enrico's Natural from Jewel}inside the empty zucchinis.
Add sauteed veggies in very light olive oil, italian seaonings and garlic - as many as you would like in the free category {spinach, peppers, onions, mushrooms}
Add 1/2 cup of corn
Add 1/2 of pine nuts
Top with 3/4 cup of black beans or 4 ounces of chicken
Sprinkle 1/2 cup of cheddar cheese or one ounce of mozzerella over the top of each zucchini
Enjoy an two entire zucchini halves after the cheese has melted atop of your creation in the oven.
Most likely, we'll be devouring these zucchini pizzas tomorrow night.
*Exchange for one dairy, one starch, one nut, one protein
